The Cooking Continues

The last week of classes is already upon us! I feel like time paused when I left Wellesley, so it’s hard to wrap my head around the fact that just one week of class and one week of finals stand between me and sophomore year. It’s been one heck of a ride. 

I’m at the point in the semester when I can write every single assignment due for each class on a single sheet of paper. Laying it all out makes it seem more manageable. I have something due this week and something for next week in each of my classes, but when I focus and get to work, I get stuff done.  

My cooking adventures have continued! Friday was my seventh anniversary of going vegan, so I put together a fantastic breakfast sandwich with vegan egg, sausage, and cheese on a bagel from up the street. I usually lean toward sweet breakfasts, but this was delicious. And I have enough of the ingredients to make another, soooo…

Yesterday I threw together a mac and cheese waffle with barbeque jackfruit and avocado. It was my first time cooking jackfruit—my mom picked up a can a few months ago when it was the demo at Trader Joe’s—and it had been sitting in the cabinet ever since. Like tofu, it doesn’t really taste like anything, so it’s a perfect vehicle for my favorite sauce.

And this afternoon, I set up a sushi-making station with my mom. We used up our sushi rice with baked tofu, cucumber, and avocado. (We don’t buy avocado often, but when we do, it means we have to eat four within the narrow window of ripeness.) Don’t worry, I’m still eating vegetables.

I’ve been having so much fun cooking! Aside from schoolwork, work, and running and working out, it’s where most of my time goes. Split pea soup and bread bowls are next on my list, once I work through the leftovers in the fridge. I can’t wait to put my new yeast to work. 

This morning, I took a walk to CVS to pick up my prescriptions. The weather was beautiful! After looking at this week’s forecast, I realized that May might be my favorite month. Winter is finally over. Flowers are blooming everywhere. The birds are chirping and I’m remembering to breathe.

Spring on a rural road
